Currant Popsicles

Raw Vegan, Gluten-Free, Paleo

Ingredients

  • 1 1/2 -2 cups coconut water 
  • 3 tablespoons of light agave nectar 
  • 3/4 cup frozen or fresh raspberries 
  • Juice of 1/2 of a lime
  • 1 small bunch of red currant
  • 1 small bunch of white currants 

Directions

  1. For the white popsicles: Mix half of the coconut water and half of the agave nectar in a measuring cup, and stir to combine. Place some red currants against the face of a popsicle mold and gently pour in the coconut water mixture to fill. Freeze for 30 minutes, then add popsicle sticks, and freeze for at least 3 hours to set. 
  2. For the red popsicles: Mix the remaining coconut water, agave nectar, raspberries and lime juice in a blender or food processor and blend until completely liquid. Place some white currants against the face of a popsicle mold and gently pour in the coconut water raspberry mixture to fill. Freeze for 30 minutes, then add popsicle sticks, and freeze for at least 3 hours to set. 

Notes

  • I use light agave nectar because it's light in color and I didn't want the popsicles to be discolored, but you can use maple syrup if you prefer, it'll just darken the popsicles a bit.
