Watermelon Donuts

Vegan, Gluten-Free, Paleo

Ingredients

  • 1/2 of a small watermelon 
  • 1/2 cup coconut yogurt 
  • Blackberries, blueberries, cherries
  • Fresh mint leaves
  • Dark chocolate pieces, finely chopped
  • Puffed quinoa 

Directions

  1. Use a donut cutter (I use this one) to slice the watermelon into donut shapes.  
  2. Stir the coconut yogurt to ensure there are no clumps. 
  3. Top with berries, cherries, dark chocolate, puffed quinoa and mint leaves.
