Vegan, Gluten-Free, Paleo
- 1/2 of a small watermelon
- 1/2 cup coconut yogurt
- Blackberries, blueberries, cherries
- Fresh mint leaves
- Dark chocolate pieces, finely chopped
- Puffed quinoa
- Use a donut cutter (I use this one) to slice the watermelon into donut shapes.
- Stir the coconut yogurt to ensure there are no clumps.
- Top with berries, cherries, dark chocolate, puffed quinoa and mint leaves.
